After the success of our waffles introduced last year, new for 2014 is our compote. Our thanks go to our lovely friend Sarah who came rushing in here recently breathless about a compote she had tried somewhere on her travels. We made it immediately. You will love it too
It's so simple, about 100gm each of dried figs, apricots, dates, cranberries (& prunes if you like) all cut in half, not cranberries of course, about 2-3 fresh oranges juiced, 3 star anise and just simmer for about 1 1/2 hours. You will need to keep adding water bit by bit as it soaks up lots. The apricots are the last to soften so check them and when it's all soft but not puree leave to cool. We keep it in sealed ice-cream container in fridge and it keeps about 2-3 weeks. Remove star anise when serving. This is quite a large quantity so just scale it all down to make a smaller batch if it's too much
A new continental delight meant to keep the effects of humidity on the body at bay.
